Pâtisserie du Vin Grenache-Syrah-Merlot

Our Grenache-Syrah-Merlot is rich, ripe and fruity and draws on the Clafoutis - a traditional French flan like cherry cake, as its inspiration. Black cherry and raspberry balanced with spicy vanilla and a hint of mocha and toasty oak, lead to a long, smooth and creamy finish.

The grapes are harvested at optimum ripeness in order to extract the ripe aromas and flavours. We use a traditional vinification process for the Grenache, the Merlot and a portion of the Syrah, with the juices being fermented for about 10 days in temperature-controlled vats at 25°C (77°F). The remaining Syrah grapes are pressed after being heated and vinified in French oak. The wines are then blended together and aged in French and American oak.
